6 medium-size ears of sweet corn
1 tbsp vegetable oil
¼ cup mayonnaise
¼ cup sour cream
1 tsp Chutni Punch or tajin seasoning
1 tbsp lime juice, plus wedges for garnish
½ cup crumbled cotija cheese
3 tbsp fresh cilantro, chopped
Salt and Pepper to taste
Remove sweet corn from the cob
Heat the vegetable oil in a skillet over medium-high heat. Stir in the corn, stirring frequently, sauté for 5-7 minutes until it starts to char. Transfer to a bowl and set aside.
In a bowl mix together the mayonnaise, sour cream, Chutni Punch or Tajin seasoning, and lime juice.
Add the mayo mixture into the sautéed corn and incorporate. Season with Salt and Pepper. Stir in the cotija cheese and sprinkle with cilantro. Serve in small bowls with wedges of lime on the side.
