Persian Potato Eggs

Ingredients:
- 1 Small red onion, sliced thin
- 5 Garlic cloves, sliced thin
- 2 Tbl spoons Grape seed oil
- 1 Tbl spoon Cumin seeds
- 1 Tbl spoon Red chili flakes
- 2 potatoes, sliced thin
- Salt
- 4 Eggs
- Microgreens, to garnish
Directions:
- In a sauté pan add the oil, onions and garlic and cook for approx. 5 mins.
- Add the spices and the potatoes and stir. Add about 1/3 cup of water, salt and cover on med-low flame.
- The potatoes should cook in approx. 20 mins.
- Flatten the potatoes and break the eggs on them, salt and cover. Let the eggs cook to your desire.
- Garnish with microgreens/herbs.
