Fresh Herbal Tea Herb Sampler
Enjoy a delectable tasting of The Chef Garden herbs English Mint, Lemon Balm, and Lemon Verbena to craft your own freshly brewed herbal teas or brighten and enhance your tea experience. These are a perfect accompaniment to our Flowerhouse Teas.
To brew fresh herbal tea, heat water to between 160-180 degrees Fahrenheit, then pour over roughly chopped fresh herbs (we recommend starting with about 1 tbsp chopped, then adjusting to your taste). Add a lid if possible to keep the essential oils from the herbs in the brewing vessel. Allow to steep for 5-10 minutes depending on the desired strength. Strain, then enjoy.
These herbs also make beautiful cold infusions, roughly chop herbs, then add to room temperature filtered water. Cover. Allow to steep for 12-24 hours, then strain. Cold infusing herbs into water pulls out fewer tannins from the herbs and creates a beautiful, smooth, refreshing tea perfect for a warm summer day.

Mint tea is a perfect way to finish a meal. Mint helps aid digestion (including symptoms such as indigestion, gas, and bloating) and freshens breath. The scent of the mint tea as you drink it may also help relieve headaches, menstrual cramps, and nasal congestion. Mint tea may help with concentration and focus, and it is caffeine-free so will not disrupt sleep.
Lemon Balm
Lemon balm tea soothes stress away and helps promote improved mood, a feeling of calm, relaxation, and sleep.
Lemon Verbena
Lemon verbena tea is bright yet soothing containing a number of anti-inflammatory and cell-protecting plant compounds (aka phytonutrients). Lemon verbena tea is delicious after a meal or before bed to help promote restful sleep.

This antioxidant blend of brassica microgreens is a great source of vitamins (A, Folate, C, E, K), minerals (iron, potassium, calcium), phytonutrients (carotenoids, glucosinolates (I3C and sulforaphane), polyphenols), and fiber.

Cooking (boiling) reduces the level of glucosinolates so we recommend that you consume these microgreens raw to obtain the most beneficial nutrients,
Looking to get the most brassica benefit from your microgreens? Chew mindfully! Chewing helps to break up the cell walls of the microgreens which release the enzyme myrosinase. Myrosinase can then come into contact with the glucosinolates changing them into isothiocyanates (like sulforaphane). Your gut bacteria help too, but chewing, chopping, etc. have the greatest impact on increasing sulforaphane (which is one of the most well-known beneficial phytochemicals in brassicas).

Clearwater Jerusalem Artichoke
Clearwater Jerusalem artichokes are incredibly sweet (almost as sweet as sorbet!) with absolutely no starch. Their unique structure makes them even more versatile than potatoes. Nutty and crunchy when raw, they taste like sweet kettle cooked chips when fried and are perfect for dessert when caramelized. Blanched, they gain the texture of undercooked potatoes, perfect for frying afterwards. They’re also delicious pureed with milk and butter; roasted, and charred, giving them brown sugar flavor. Brix readings are literally as high as an apple. Our spinach starts off sweet tasting, then finishes with nutty-buttery flavor. For a variety of fresh spinach with a mildly bitter taste progressing into earthiness, choose tropical spinach with its bright red stem and small reddish-green leaves. Our promise: we’ll never grow fresh spinach for maximum yield. Instead, we grow for flavor and nutrition.
