With perfectly sized portions, our Salad Boxes are designed to provide vegetables for two people for approximately one week. This makes meal planning a breeze, ensuring there's no waste and only the right amount of farm-fresh goodness on your plate.
The beauty of salads, as noted by Chef Jamie Simpson from the Culinary Vegetable Institute, lies in the fact that the farmer has already done nearly all the work for you. Salads are packed with phytonutrients, including antioxidants, vitamins, minerals, and fiber. They are a great way to increase your intake of vitamins A, C, E, folate, and K and to support a healthy gut microbiome. The high fiber and lower carbohydrate content of this nutrient-dense box may help to stabilize blood sugar following a meal, and our bitter greens may help improve digestion by stimulating your own digestive juices.
To retain the most nutrients from these vegetables, it is best to eat them raw, blanched, or lightly sautéed. Exactly what's included in each of our Salad Boxes will vary by season, but they'll always be perfectly curated with just the right amount of farm-fresh greens and other veggies, ensuring a delightful and nutritious dining experience.
At The Chef’s Garden nutrition goes hand-in-hand with flavorful, quality vegetables. It is so important that in 2019, we opened an on-site agricultural research facility. We study how to maximize the flavor, color and nutrition of our vegetables in order to bring the highest quality to your door.

Slicing Cucumber Seed
Very dark green, uniform, 7–8" slicing cucumbers despite cool weather or heat. Small seed cavity. Skin is thick enough to endure harvesting and handling, but thinner than the average slicing cucumber.

Spinach
One of our signature crops is fresh spinach -- and we offer multiple varieties. Our delicious root spinach tastes mild, fresh, green and buttery, with natural sugar content off the charts! Brix readings are literally as high as an apple. Our spinach starts off sweet tasting, then finishes with nutty-buttery flavor. For a variety of fresh spinach with a mildly bitter taste progressing into earthiness, choose tropical spinach with its bright red stem and small reddish-green leaves. Our promise: we’ll never grow fresh spinach for maximum yield. Instead, we grow for flavor and nutrition.

Our talented team brainstormed the idea of signature marmalades as part of a process to reduce food waste—with a result that’s deliciously creative. In collaboration with Prospect Jam Company, an artisan marmalade company in Ohio we've created a collection marmalades, jams and jellies that contain ingredients that are regeneratively farmed with love at The Chef’s Garden for the maximum in flavor and nutrition.

Emily spent plenty of time brainstorming and experimentation with our chef team to find exactly the right ingredients and proportions for the optimal flavor, texture, and visual appeal. As an important bonus, these artisan jams allow us to reduce food waste and extend the reach of our produce.

This antioxidant blend of brassica microgreens is a great source of vitamins (A, Folate, C, E, K), minerals (iron, potassium, calcium), phytonutrients (carotenoids, glucosinolates (I3C and sulforaphane), polyphenols), and fiber.

Cooking (boiling) reduces the level of glucosinolates so we recommend that you consume these microgreens raw to obtain the most beneficial nutrients,
Looking to get the most brassica benefit from your microgreens? Chew mindfully! Chewing helps to break up the cell walls of the microgreens which release the enzyme myrosinase. Myrosinase can then come into contact with the glucosinolates changing them into isothiocyanates (like sulforaphane). Your gut bacteria help too, but chewing, chopping, etc. have the greatest impact on increasing sulforaphane (which is one of the most well-known beneficial phytochemicals in brassicas).

Ultra Bok Choy
Bok choy offers up a refreshing cabbage and mustard taste, adding delicious layers of flavors to your creative dishes. Light green leaves are paddle- and heart-shaped with pure white stems, and they provide a crunchy, juicy texture. Its leaves and stems are mildly flavored, yet you still get the refreshingly crisp characteristic of cabbage. You can make it into stir-fries, pickled salads, side dishes or even soup. Watercress
Watercress plant provides unique flavor to culinary dishes, one that’s salty, yet spicy, and slightly bitter. Texture is delicately thin with deliciously edible white blooms. Fresh watercress can be ideal in creative soups and salads, sandwiches and much more.

Zucchini Squash Seed
Classic Costata Romanesco appearance but superior uniformity, higher yielding, and easier to harvest. Improved upright bush habit with reduced spines. Firm flower attachment at marketable size and attractive, glossy fruit. Edible blossoms bear a mild, squash-like flavor and are great stuffed and fried, or sliced for use in soups, omelets, salads, and pasta dishes.
