Walking The Chef’s Garden farm and seeing the entire operation from seed to packing and shipping was capped with a walk through the fields of over 60 varieties of tomatoes.

We talked, picked and tasted, discussing the possibilities of where they would be used on the menu. This is my favorite start for a dish and for a menu. Color, textures, aromas and flavors inspired a collaboration that makes you wish it could always be this way. 

Not only is the produce exceptional but you can only marvel at the sustainable stewardship that they proudly pursue and maintain. I am so proud to have been a part of it.

Clearwater Jerusalem artichokes are incredibly sweet (almost as sweet as sorbet!) with absolutely no starch. Their unique structure makes them even more versatile than potatoes. Nutty and crunchy when raw, they taste like sweet kettle cooked chips when fried and are perfect for dessert when caramelized. Blanched, they gain the texture of undercooked potatoes, perfect for frying afterwards. They’re also delicious pureed with milk and butter; roasted, and charred, giving them brown sugar flavor. Clearwater Jerusalem artichokes have tan skin over beautiful creamy-white flesh. Also called sunroot, earth apple, sunchoke and Canadian truffle.

Green Goddess Dip

Create a Green Goddess Dip:

• 1 cup of greens. Choose a combination of your favorite greens such as dill, mint, parsley, basil, chives, watercress or cilantro.
  
• 1-2 garlic cloves, chopped
• 2 scallions, white and green parts, sliced
• 1 ½ tablespoons freshly squeezed lemon juice
•  Pinch kosher salt, more to taste
• 1/3 cup extra virgin olive oil
• ½ cup crumbled feta cheese, optional
• ½ cup Créme Fraiche, Sour Cream, or Plain Greek Yogurt
• ¼ cup mayonnaise, optional

If you are dairy intolerant, sub soft tofu for the cheese and yogurt and add the traditional anchovy or tsp of fish sauce. The anchovy replaces the tang of the fermented dairy items.

1. Place greens, garlic, scallions, lemon juice and salt in a food processor and process until finely chopped.
2. With the motor running, drizzle in the olive oil until incorporated. Add feta and process until smooth; pulse in yogurt. Taste dip and add more salt, if desired. If you like a creamier, richer dip, add mayonnaise and pulse to combine.
3. Serve dip immediately or cover and store in the refrigerator for up to 3 days.

At first glance, cucamelons look like miniature 1” watermelons. Cucamelons are truly delicious, with a flavor like fresh cucumber mixed with a hint of lime.
